Strawberries and Rhubarbs and Apples

When you think of Rhubarb, for most of us the only thing that comes to mind is Rhubarb Pie?  One year my friend had a bumper crop of rhubarb in her garden, but she told me, “We could only eat so much rhubarb pie!”

But this Strawberry- Rhubarb – Applesauce is really worth growing some rhubarb, or a minimum of purchasing some

The best ways to find rhubarb:

  • Rhubarb is a pinkish- reddish stalk that looks similar to celery.
  • Found in many produce department of major grocery stores.


The Sauce is very simple.  We used:

  • 2 apples, peeled and diced
  • 2 stalks rhubarb, sliced and cut up

Boiled in water about 10-15 minutes till apples and rhubarb are soft enough to effortlessly slide a fork into.

Drain and cool for a few minutes then put the apples and rhubarb in a blender, along with

  • 1/2 tsp cinnamon
  • 4 strawberries
  • 1/3 cup of the water from boiling the fruit

Blend for just a second or two.  Just pulsed it until it looks blended for chunky applesauce.  If you prefer smoother then blend longer so it’s thinner and smoother.
