Cafe Rio Chicken In the Crockpot Salad


Cafe rio chicken


2 unit (yield from 1 lb ready-to-cook chicken) Chicken, broilers or fryers, breast, meat only, raw

4 tbsp Italian Salad Dressing, Light

1/2 tbsp Spices, chili powder

1/2 tbsp, whole Cumin

1 clove Garlic

8 Tortilla, Flour

2 cup Brown Rice, Cooked

1 small whole (2-2/5″ dia) Tomato, Red

1 avocado, NS as to Florida or California Avocados, raw, all commercial varieties

4 cup shredded Iceberg Lettuce

2 cup Beans, black, mature seeds, cooked, boiled, without salt

1/2 cup, shredded Cheese, cheddar

4 tablespoon Ranch Dressing, Low Fat



Mix Italian dressing, chili powder, cumin, and garlic in a bowl. Place chicken on bottom of a greased slow cooker. Pour mixture in bowl over the top of chicken. Cook on high 4 hours. Shred chicken with a fork and reserve juice to pour over chicken when serving.

To assemble, Layer 1 tortilla, a few spoonful’s of rice, shredded lettuce, some black beans, chopped tomato and avocado, cooked crockpot chicken, cheese, and dressing if desired.
