Spinach Salad and Whole Wheat Pizza got Married!

Spinach Salad Pizza For Kids sm


Whole Wheat Pizza Crust:

2 1⁄4 teaspoons Yeast

1⁄2 teaspoon Brown Sugar

1 1⁄2 cups Warm Water

1 teaspoon Salt

2 tablespoons Olive Oil

3 1⁄3 cups Flour (We use half whole wheat and half white)

Dissolve yeast and brown sugar in water. Let sit for 10 minutes.  Stir in salt, oil and flour. Knead dough on floured surface just until not sticky. Put in greased bowl and let rise till double (1 hour). Punch dough down, let sit on pizza pan for a few minutes. Then roll out. Let sit again for 10 minutes

Roll out on pizza pan. Cook at 425 for about 10 minutes.


Spinach Salad:

1 TBL Olive oil

1 TBL Vinegar

Dash of salt

2 cups baby spinach

1/2 cup feta cheese, crumbled

1/2 red onion, sliced or chopped

1 cup sliced strawberries

1/4 cup pecans, chopped

Using a pastry brush, brush olive oil on the cooked crust. Then, brush vinegar and sprinkle with salt.  Sprinkle the feta cheese. Top with spinach, chopped onion, sliced strawberries and pecans. Return to the oven for about 5 minutes, or until cheese and strawberries begin to get toasty.
