Steak Fajita Rice Bowls {Oh Sweet Basil}




2 Cups Steak, grilled and sliced

1/2 Red, Green and

Orange Bell Peppers,

Sliced 1/2 Purple Onion,

Sliced 1 to 2 ears of corn, grilled and removed from the cob

Queso Fresco Cheese


For the Rice

1 Cup of Brown Rice

2 Cups of Water

1 Tablespoon Fajita Seasoning



Heat a large skillet over medium heat. Add the peppers and onion and a drizzle of olive oil. Cook until tender, about 8 minutes. Remove from heat.   In a rice cooker, combine the rice, water and seasoning. Cook per product instructions or in a pan bring it to boil, add the lid and turn down to low for 20 minutes or until cooked through.   Warm up the steak and toss with the peppers, onion, corn and cheese. Enjoy!
