Icebox Pickles


Growing up on a farm one of the things I remember doing is making icebox pickles when the cucumbers were ready.  I love these pickles and I think icebox pickles are the best  many people call them bread and butter pickles. The fresh flavor that is just wonderful and completely different from any store-bought pickles you will find. These icebox pickles are delicious and so quick and easy to make!

7 cups thinly sliced, unpeeled cucumbers

1 1/2  cup sliced red onion

1/4  cup sliced red bell pepper

1/4  cup sliced yellow bell pepper

1/4 cup sliced green bell pepper

1 clove minced garlic

2 Tablespoon celery seed

1/2 teaspoon mustard seed

1/2 teaspoon tumeric

1 Tablespoon salt

2 cups cane sugar

1 cup white vinegar

Combine all ingredients in a glass jar cover with water and refrigerate. Let them sit in the refrigerator for a few weeks.


This recipe works great for other vegetables like okra, zucchini, squash, and green tomatoes. If you would like to spice things up throw in a whole cayenne, jalapeno, or chilies.
