Tasher’s Favorite Mustard Potato Salad

  • 3 pounds fingerling  or about 8 red potatoes cut up
  • 1/2 cup mayonnaise
  • 1 tablespoon chopped fresh parsley
  • 1 small clove garlic diced
  • 1 tablespoon prepared mustard
  • 1 tablespoon fresh lemon juice
  • fresh basil and dill chopped to your taste
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped onion
  • ¼ cup chopped green onion tops
  • 2 stalks celery chopped
  • ¼ cup bell peppers chopped
  • 3 hard-boiled eggs chopped
  • 1 hard-boiled egg sliced
  • 1 tbsp. prepared mustard
  • 3 tbsp. dill relish
  • ½ cup sour cream
  • Salt and  pepper to taste



Boil potatoes in salted water about 10 to12 minutes or until just tender. Drain the potatoes and put in ice water to cool quickly then drain again.

In a bowl, combine all remaining ingredients then combine cooled potatoes with other ingredients.

Top with sliced boiled egg  and sprinkle paprika on top (optional) 

Serve Chilled
