Tangy Fruit and Rice


Tangy Fruit and Rice

  • 1/2 cup brown rice, cooked
  • 1 cup pineapple tidbits, or diced pineapple
  • 1 cup corn (thawed, fresh, or canned)
  • 2 red bell peppers (or 1 cup chopped)
  • Dressing
  • 2 TBL Oil of choice
  • 1 TBL Soy sauce (low sodium)
  • 1 garlic clove
  • 1 teaspoon ginger root, grated


  1. Combine rice, pineapple, corn, and red peppers into a bowl.
  2. Combine ingredients for dressing in a separate bowl.
  3. Pour dressing over rice mixture
