Panko Parmesan Chicken

8 piece Chicken breast tenders, uncooked

1/2 cup Wheat flour, white, all-purpose, enriched, unbleached

4 medium Egg

1 cup Bread crumbs, dry, grated, plain

1 cup Cheese, parmesan, grated

1 tsp Salt

3 tablespoon Olive Oil



Prepare a 13X9 inch cake pan by spreading 2 TBL of the olive oil in the bottom.

Using three bowls, place the flour in one, the eggs and water in a second, and the panko mixed with the cheese and salt in a third. Dump all the chicken in the bowl with a flour, tossing to coat each chicken piece completely.

One by one, dunk the chicken in the egg and water mixture. Then dip each chicken tender into the panko and cheese mixture, turning to coat.

Add the chicken pieces to your pan on top of the olive oil. Drizzle the last tablespoon of olive oil over the top of the chicken.

Bake at 400 degrees for 20 minutes, flip each chicken piece and bake for about 15 more minutes, or until your chicken is cooked throughout.
