Don’t like to cook with Beer try Root Beer-Can Chicken. The recipe is basically the same as Beer-Can Chicken but using Root Beer. Try it next time you are grilling.
For this you do indirect grilling, heating one side to medium.
Combine first 6 ingredients and 1/4 teaspoon salt in a small bowl.
To make sauce for basting; pour 18 ounces into a small saucepan over medium bring to a boil. Leave the remaining root beer in the can and set aside. Cook about 20 minutes until reduced to 1/3 cup. Add remaining 1/4 teaspoon salt, butter, and vinegar, stirring until smooth.
Rub the first 6 ingredient mixture evenly over chicken. Put opened root beer can into cavity. Place chicken on unheated side of grill. Spread legs out to form a tripod to support the chicken. Grill for about 1 hour and 30 minutes or until a meat thermometer registers 160° baste chicken every 20 minutes with sauce.
Carefully remove chicken and can from grill; let it sit for 10 minutes. Carve chicken.
