Alligator Pear Salad

  Alligator Pear Salad 2 cups corn kernels 3 ounces walnuts 2 ripe avocados (sliced and chopped) 1/4 cup lemon juice 1/4 cup light sour cream. Mix corn, walnuts and avocados together.  In separate bowl, mix lemon juice and sour cream.  Add to mixture to the salad, stir and serve.  Tastes great chilled. PUMPKIN FRENCH TOAST

      Ingredients to make PUMPKIN FRENCH TOAST 5 slices whole wheat bread 3 e5ggs 1/3 cup pumpkin puree 1 TBL milk 1/2 tsp pumpkin pie spice 1 tsp vanilla Mix all ingredients together except the bread.  Soak both sides of bread in egg mixture.  Heat skillet.  Cook bread on hot skillet until both sides no longer show wet eggs.   Top with a cinnamon syrup or real maple syrup.   Recipe originally posted on Super Healthy Kids.
